Vinification : Discover the authentic experience of grape selection, carried out directly on the plant with manual harvesting in small baskets. The destemming process is carried out with extreme care to preserve the integrity of the berries. Spontaneous alcoholic fermentation takes place in stainless steel at controlled temperature. controlled between 25 Β° and 28 Β° C, perfect for Cabernet Sauvignon. Macerations last about 12-14 days, and thanks to 2/3 pumping overs per day during fermentation, we obtain elegant musts, with great structure and aroma. Fermentation Spontaneous malolactic fermentation ends at the end of November.
Aging : Our fine wine is then placed in French oak barriques (one third new, the rest with second and third testing passage) for a maturation period of 18 months. The assembly is carried out at the end of November, a good 5 months before bottling, to ensure refinement in glass before being released for sale.
